Mail servers allow you to send and receive e-mails by storing them on your own server and not from an external provider (such as Hotmail, gmail or any web host that also provides a mail server).
Although mail servers are usually installed on Linux (thanks to Postfix) and on Windows Server (mostly thanks to Microsoft Exchange), it's still possible to install them on client versions of Windows.
